OLIVE OIL FROM OLD OLIVE TREES

This oil has been bottled bearing in mind the best preservation possible. Therefore it is advisable not to remove the wrapping, if so, make sure that the oil is stored in a dark place with a temperature between 15° and 20 °C.

We have made a great effort to give this oil the characteristic taste and aroma of the Argudell olive variety. The best quality is obtained using wholesome olives, picked directly from the tree and ground as quickly as possible.

To obtain the taste and colour natural to this green fruit we have sacrificed the efficiency olive – oil, decreasing from the 19-21% which is obtained with the ripe olives blown to the ground by Tramuntana (usual procedure in the Ampurdan region), to the eventual 14-16% obtained by picking the half-ripe fruit directly from the tree (losing 1/3).
It is an expensive procedure though it is the only way of producing Extra Virgin oil of low acidity, with personality and unique features, as Argudell olive trees are exclusively grown in this region, remaining nowadays a total of 120,000 trees in 222 acres, lying mainly in the mountains of l’Albera and in Cap de Creus.

These are the only olive trees which survived the frost of 10th February 1956, which razed to the ground nearly all the trees in the region. To make the most of its aromatic potential, we have carried out the elaboration process in cold, bottling the oil without being filtered. Highly recommended for any kind of salads, carpaccios, toasts, bread with tomato and for the elaboration of hot or cold sauces like mayonnaise, pil-pil, as well as frying and sautéing.
